There is nothing like a cool treat after playing in the heat and humidity of the South. And let me tell you, it's been HOT this week. In fact, tomorrow it's supposed to be a sticky 100 degrees. Ew!
For weeks my monkeys have been begging for popsicles "just like Jonathan's mom makes" so I finally asked Jonathan's mom for her secret recipe. Guess what? It's super easy, super yummy and super healthy (well, as far as popsicles are concerned, lol). All you do is:
Take one can orange juice concentrate
2 cans water
1 large tub vanilla yogurt
Mix them well with a wire wisk and pour into your popsicle molds (I bought mine at Target) to freeze overnight. We made 8 large popsicles and have enough of the "mix" left in the fridge to make 6-8 more. Next time I'll likely half the recipe and just make 8 at a time ... I also can't wait to mix in fresh or frozen fruit, or mix things up with different juice combos.
